The Western Culinary Institute was founded in Portland, Oregon in 1983 and has become a renowned location associated with Le Cordon Bleu studies and achievement in greatness in culinary arts, baking, and hospitality training. At the institute, you'll find yourself working with state-of-the-art equipment to create appetizing cuisine in both the classical French tradition and the modern American style. Studies are divided into four categories. A diploma course in Le Cordon Bleu Culinary Techniques prepares students for employment as entry-level cooks, line cooks, or prep cooks, training them in proficiency of house operations (front and back), catering and banquet settings, running stations in a modern culinary facility, and producing recipes from around the world. The Le Cordon Bleu Patisserie and Baking program is taught with the goal of preparing students with a high level of expertise that results in a head start with an edge in finding careers in fine restaurants, hotels, country clubs, resorts, caterers, and more as specialized bakers and pastry chefs. The Le Cordon Bleu Culinary Arts program offers an Associates of Specialized Technology degree and builds the same skills as the Diploma program to a higher level, preparing individuals to become caterers, private chefs, restaurant owners, and more. The Le Cordon Bleu Hospitality and Restaurant Management program results in an Associate of Specialized Business degree and prepares students to become restaurant managers or owners, food and beverage directors, bartenders, catering managers, and more.
