In the baking and pastry program, you'll learn to use tools and equipment to produce cakes, yeast breads, quick breads, frozen desserts, centerpieces, cookies, candies, and a variety of pastries. In the culinary arts program, you'll learn about American regional cuisine (as well as traditional French and international cuisine), meat cutting, stock and sauces, and introductory baking and pastries, as well as administrative procedures such as sanitation, nutrition, dining room management, and storeroom operations. By the time you successfully complete your program, you can obtain a number of positions in the food service industry.
Both comprehensive curriculums can prepare students for exciting and artistic careers in the food service industry, a business that never goes out of style and is always in need of fresh, innovative workers. At graduation, you'll be prepared for entry-level positions and you can work with the Capital Culinary Institute for career placement assistance. You can also receive assistance during the coursework in finding a part-time job to help fulfill your monetary needs.
