At the Arizona Culinary Institute in Scottsdale, you'll find an 18,000 square-foot building with five kitchens, a restaurant that serves as a laboratory for students, a library, three classrooms, demonstration rooms, and more that provide the necessary environment for training toward a diploma in culinary arts, baking, and restaurant management. The kitchens are professionally designed and include a front line kitchen, saucier kitchen, bakery, advanced baking and showpiece kitchen, and a basic culinary arts kitchen. The du Jour restaurant is run by ACI students and is used for the four-credit restaurant operation course that is part of the curriculum.
The program at ACI is well balanced and can be completed in as little as nine months for the dedicated student, beginning with a six-week "Basics" course that takes you into the classroom to get you ready for your adventures in the kitchens that start right away. You'll follow with courses dedicated to various elements of cooking and baking, including saucier and meat fabrication; basic baking; advanced baking, pastries and showpieces; and advanced cuisine, during which you'll get practical and theoretical experience in the du Jour restaurant, working in the front line kitchen.
Other courses include management; wine and spirits, where you'll learn to operate a restaurant and manage employees; nutrition, which will help you better understand dietary guidelines and how they impact the restaurant industry; restaurant operation, where you gain practical knowledge through the management of the du Jour Restaurant; and a twelve-week paid internship as the final course to achieve your diploma.
